  • 1 tablespoon oil
  • 1/2 chorizo, thinly sliced
  • 500 g chicken thigh fillets, diced
  • 1 cup (200g) medium grain rice
  • 3 cups (750mL) boiling water
  • 1 sachet Continental Seasoning Sensations Spanish Paella
  • 1 cup cherry tomatoes, halved
  • 1 cup frozen peas, thawed
  • lemon wedges, to serve

Spanish Chicken and Chorizo Paella
  1. Heat oil in a large, deep frying pan over medium-high heat. Add chorizo and cook for 3 mins until golden brown. Add chicken and cook for 5 mins or until golden.

  2. Add rice. Cook, stirring, for 1 min. Add seasoning mix and boiling water. Bring to the boil, stirring. Reduce heat to medium-low and simmer gently, uncovered, for 20-25 mins, stirring regularly or until liquid is almost absorbed.

  3. Stir in cherry tomatoes and peas. Cover. Cook for a further 5 mins or until rice is just tender and liquid absorbed. Serve with lemon wedges.

  4. Swap chicken for: • 500g pork scotch fillet steak, diced. • 500g frozen peeled raw prawns, thawed, drained. Stir into rice mixture after 15 mins. • 2 x 400g cans chickpeas. Add in with the seasoning mix. Swap chorizo for 1 red capsicum, thinly sliced.
